Continuing with No-Bake Monday, I decided to make some Raw Chocolate Biscotti a la the girls at Pure2Raw. I actually got the recipe from a guest post at Fitnessista. I’m really digging the no-bake cookies right now…
Raw Chocolate Pecan Biscotti
2 cups pecans
1/2 cup coconut flakes or shredded coconut
1 cup cocoa
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
2 tbsp coconut oil
3 tbsp maple syrup
Combine the pecans, cocoa, salt, cinnamon and coconut in the food processor and chop into fine crumbs. Then add the vanilla, coconut oil and maple syrup. Mix until doughy. Spread the dough on a baking sheet lined with parchment paper, and form into a log. Cut into the desired size cookies and refrigerate for at least 30 minutes before serving!
Perfectly sweet and nutty! I really like that they are sweetened with maple syrup too. I haven’t made anything with cocoa in a long time– these were SO easy! I think I might make some more to take up to Vermont with me for the Christmas weekend!
