Free Your Mind: Paleo Stuffed Peppers Reloaded

I’ve been cooking up a storm this week and it feels good! One of my goals for the Return to Nourishment Cleanse was to make more meals at home. These past few months were super busy and I didn’t cook at home as much as I would have liked.

I’m totally making up for that now!

Anyhoo. M liked the Paleo Stuffed Peppers I made a while back. He reeeeally liked them….like he requested that I make them again for the cleanse.

So I did.

With a few changes.

Paleo Stuffed Peppers Reloaded


2 Red bell peppers

1/2 lb ground turkey

2 cloves of garlic, pressed

1/3 cup fresh basil

2 cups curly kale

1 egg

a dash of parsley

The players.

I actually used an entire pound of ground turkey while testing this recipe. I ended up making enough for 4 peppers…

The directions are simple:

Put everything but the peppers into a bowl and mix it up real good. Looks appetizing, eh?

Slice your peppers lengthwise and stuff them to the brim.

If you run out of peppers, get more peppers.

These little green guys are from my tiny garden.

Place the peppers in a glass baking dish and bake at 400 F for 40 minutes.


The basil made these. Next time I might use a little almond flour to give the filling more of a meatloaf quality.


Which do you like better? Red Peppers or Green Peppers?

    Hi, They look delicious and I would like to try them. Thanks so much for the recipe. I like the red peppers the best as they are easier for me to digest.

    Do you think I could add quinoa to this too? If so, would I cook it first or add it raw?

      Yes! You could definitely add quinoa. I would cook it first– to be on the safe side– I’m not sure that there’s enough liquid in the recipe to cook the quinoa inside the peppers. Let me know how it turns out!
