Asparagus and Prosciutto Stuffed Chicken

Sometimes I go to the grocery store and buy vegetables that I have no idea how to cook.

This week, that vegetable was asparagus.

I’ve eaten asparagus before, but never prepared it myself.

Those pointy tops can be intimidating…

I decided the best thing to do was to steam it and then stuff it inside some chicken with prosciutto and fresh mozzarella.

Asparagus and Prosciutto Stuffed Chicken


One bunch asparagus (some for stuffing, some for eating on the side)

4 boneless, skinless chicken breasts

Prosciutto (I used Applegate Farms brand)

fresh mozzarella (I used 2 small balls, sliced in half¬† in each piece of chicken…)

The directions are pretty easy.¬† Preheat the oven to 350 F. Lightly steam the asparagus–you want it bright green, but not mushy.

Butterfly each chicken breast and fill with a slice of prosciutto, some asparagus and mozzarella.

Close the chicken breast and secure with a toothpick or two. Place the stuffed chicks in a baking dish and cook for 35 to 40 minutes.

We ate ours with a side of asparagus. Delicious.
