Last weekend M and I went to Lil’Nic’s (my little sister) house for brunch.
We all love brunch.
It’s our favorite restaurant meal.
Who doesn’t love a meal where you can eat eggs, bacon, sausage, fruit AND salad if you want?
There were a lot of really delicious Paleo foods featured at our Sunday Brunch.
Cinnamon baked apples with pecans from Paleo Comfort Foods (Lil’Nic made these…)
2 large sweet potatoes, cut into small cubes
1 onion, chopped
Coconut oil or bacon grease for the pan
Directions are simple:
- In a large frying pan or skillet greased with coconut oil or bacon grease, cook the sweet potatoes until they start to soften.
- Add your onion and seasonings and cook until sweet potatoes are soft and onion is translucent (about 20 minutes).
