Sweet Potato Home Fries

Last weekend M and I went to Lil’Nic’s (my little sister) house for brunch.

We allĀ  love brunch.

It’s our favorite restaurant meal.

Who doesn’t love a meal where you can eat eggs, bacon, sausage, fruit AND salad if you want?

There were a lot of really delicious Paleo foods featured at our Sunday Brunch.

Sweet Potato Home Fries


2 large sweet potatoes, cut into small cubes

1 onion, chopped

sea salt


garlic powder


Coconut oil or bacon grease for the pan

Directions are simple:

  1. In a large frying pan or skilletĀ  greased with coconut oil or bacon grease, cook the sweet potatoes until they start to soften.
  2. Add your onion and seasonings and cook until sweet potatoes are soft and onion is translucent (about 20 minutes).
  3. That’s it! Super easy…
