You know I love steak tips. Well, here is another steak tip recipe. Go with it.
Anyway. I started reading this really amazing grilling cookbook that M got for Christmas. I love that the subtitle is “400 ways for grilling anything.” They mean that: there are recipes for some crazy meats in there…
Not only does this book have recipes, but it teaches you the importance of brining and marinating in a way that’s kind of sciency, which I like.
So, I learned that a marinade should have salt or sugar in it to tenderize the meat. I also learned that if you marinate for too long, the tenderizing process reverses…or something.
I’ve been wanting to marinate or brine things since I read this book, so the other day I defrosted some steak and put together a little marinade.
This recipe is loosely based on one I found in the book.
Cumin Lime Steak Tips
2 lbs steak tips
1 Tbsp cumin
1 Tbsp coriander
juice and pulp of one lime
3/4 cup water
1 Tbsp sea salt
1 Tbsp maple syrup
Combine all of the ingredients in a plastic ziploc bag (or a glass container) and allow the meat to marinate in the fridge for 2 to 12 hours.
Remove the steak from the marinade one hour before cooking so that it can come to room temperature. Once it’s had some time to sit, grill it on up and enjoy.
- 2 lbs steak
- 1 Tbsp cumin
- 1 Tbsp coriander
- juice and pulp of one lime
- 3/4 cup water
- 1 Tbsp sea salt
- 1 Tbsp maple syrup
- black pepper
- Combine all of your ingredients in a non-metal bowl.
- Marinate the steak for two to 24 hours
- Grill to your heart’s content!
This. was. awesome. The meat was so tender and flavorful! I don’t think I’ve ever had steak tips this tender…and I eat a lot of steak.
My favorite thing about this recipe was that it only dirtied one dish. I hate doing dishes.
