Chicken Charditas

We made Charditas:

Lemon Chili Chicken with red and yellow peppers, red onion, guacamole, salsa and chopped tomatoes wrapped in a Swiss chard leaf.

Charditas.Get it? Chicken fajitas in Swiss chard? It’s like Brangelina or Bennifer, but with food.

We grilled some Lemon Chili Chicken, and sautéed some peppers and onion.

There was guacamole, and his little friend, the Plantain Chip:

We wrapped them all up,

and at them with our hands. Delish.

    Over the past few years, I’ve had all sorts of regular sandwiches (not paleo specific) served using a lettuce wrap instead of a bun. Although they can be a little bit messier to eat, I find that the food tastes much more flavorful sans bread. I really with more restaurants would offer this as an option. I have never thought of using chard as a tortilla substitute, but am excited to try it!
