Spicy Breakfast Sausage

Spicing up my breakfasts with some spicy breakfast sausage.

Can you see it? There in the back? That’s a breakfast sausage.

I also eat them for lunch.

These little guys are a great way to get some extra protein in the morning without all of the preservatives that are in store-bought breakfast sausages.

Let me tell you: they are so easy to make.

Spicy Breakfast Sausage (from Make it Paleo)


1 lb ground pork (local, pastured pork is best)

1 tsp garlic (flakes or powder)

1 tsp fennel seeds

1 tsp paprika

1/2 tsp sage

1/2 tsp sea salt

1/2 tsp black pepper

1/4 tsp plus a pinch of cayenne pepper

2 Tbsp coconut oil (I used Tropical Traditions)


  1. In a medium sized bowl, combine the pork and spices. Use your hands to mush those spices in there good.
  2. Form about 8 sausage patties by rolling the pork into a ball and flattening with your hand.
  3. Cook the sausages in coconut oil over medium heat– the original directions say to use about 1 Tbsp of coconut oil per 4 patties. Cook until golden brown, firm and the centers are no longer pink.
  4. Eat for breakfast, lunch or dinner.

I used local pork to make these babies. I also added a little extra cayenne for an extra spicy kick in the pants.
